I've always liked peanut butter cookies, but generally they are a bit too dry and crumbly for my liking. The exception is this recipe, which contains only 4 ingredients! They are the most peanut-buttery peanut butter cookies, they are not at all dry, and they are a cinch to make!
Ingredients:
1 cup brown sugar
1 cup white sugar
2 eggs
2 cups peanut butter
Oven Temperature: 350 degrees
Baking Time: 7-9 minutes; 7 for a softer cookie, 9 minutes for a soft cookie that is easier to transfer from the baking sheet to cooling rack. Bake longer, approximately 11 minutes, if you prefer a crispier cookie.
Take the above ingredients and place them into a mixing bowl.
Mix at a low speed, until all the ingredients are well combined.
Place blobs of cookie dough onto a cookie sheet. Parchment paper is optional.
Take a lightly floured fork and make a cross-hatch impression on the top of the cookie for the traditional PB cookie look. This is a sticky dough, so you'll need to dip the fork in flour after pressing down each cookie.
The cookies spread out a little bit as they bake, but not too much. For the size I made them, I was able to get 2 dozen cookies from the dough. If you were to make them smaller, obviously you'd end up with more cookies.
