Pumpkin Spice Bars with Cream Cheese Frosting

Okay, so I said I am not a huge pumpkin fan...however, certain members of my household are.  And that's not to say I don't like pumpkin, I just tend to lean toward apple desserts in the fall, I guess.  This past weekend we visited some friends and she made some tasty pumpkin bars.  My daughter loved the bars and asked if we could have the recipe.  Our friend graciously handed the recipe to her and it's simple enough she was able to make it yesterday.  We made a couple of modifications to the recipe and were pleased with the end results!  Ours turned out more like a cake than bars...but you could modify that based on the kind of pan you use.  I used an 8x11" pan, but if you used a jelly roll pan, yours would be more like bars.


Ingredients:
1 can (15 oz.) pumpkin
2 c. sugar
3/4 c. oil
3 eggs
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. all spice

Frosting ingredients:
1 stick butter
6 oz. cream cheese
1 tsp. vanilla
3 c. powdered sugar

Oven Temperature: 325 degrees
Baking Time: approx. 30 minutes for jelly roll pan, 35 for 9x13" pan, 40 mins for 8x11" pan.

Place wet ingredients in one bowl and combine.  Place dry ingredients in another bowl and mix.  Pour dry ingredients into wet and stir well.  Pour batter into greased pan and bake per the above instructions. Once the bars have baked through, remove from oven and allow them to cool.

For the frosting, combine softened butter, cream cheese, and vanilla.  Add powdered sugar and mix well.  If you prefer thicker or thinner frosting, adjust the amount of powdered sugar you use.  Once bars have cooled, spread frosting over the top.  Enjoy!
